A strange yet tasty sweet and savoury cookie. Makes 15-20 cookies depending on size


5 slices smoked streaky bacon
220g plain flour
1/4 tbs bicarbonate of soda
1/2 tbs salt
1/2 tbs baking powder
120g unsalted butter (cubes)
260g caster sugar (unrefined pref)
2 large eggs
60g dried banana (roughly chopped)


Preheat oven to 190oC

Place bacon on a baking tray lined with grease proof, place in oven for 10mins

Remove the tray and pat dry bacon with paper towel and leave to cool to room temp

When cool dice the bacon into small pieces

Sift flour, bicarb, baking powder and salt into a bowl and set aside

Cream together the sugar and butter until light and fluffy

Add the eggs one at a time. Mixing well each time until fully incorporated

Slowly add the flour mix to the egg mixture, continue to mix until fully incorporated

Add the bacon and banana to the mix and combine for a further 2mins

Line a baking tray with baking parchment

Use an ice cream scoop to portion the dough onto the tray, leave roughly 9-10cm between as cookies will expand

Bake in the oven for 8-10mins or until golden brown with a crispy edge

Remove from the oven and allow to cool slightly before moving to wire rack

Cookies should last around 5 days in an airtight container
