Brockencotes menu for the next weekish

Now at 7 weeks in, still got lots to do..ha ha

probably 75 percent happy with the dishes, still more work needs done, build it slowly with the staff, im sure youll agree

i got fed up of the silly small a la carte before but larger tdh and lunch so ive changed it

when i get bored, or produce becomes good or bad i change

4 new changes today for 82 covers in the restaurant for saturday dinner service

My wet season menu in Broome, only have another week left and then i’m off travelling again. Been running this for a coulpe of months now, more simple than the last one but I think a lot nicer as well more rustic not so fiddly…..

Broomtime chef how does this dish work, as I used Hanout spice when in the middle east which had heavy overtones of rose petals and lavender and roasted pepper. just not sure about how the flavours will marry with the tuscan beans

Just started planning my menu for March April

so far I have

Starters

Shredded confit of chicken leg - linguine - ginger, garlic, chilli, honey, coriander and emon zest dressing

3 cheese terrine - black pepper shortbread - quince paste

Mains

cod wrapped in air dried ham - crispy fried tomato risotto balls - spinach -  preserved lemon strips

black olive polenta - chargrilled med vegetables - tomato fondue -  spinach and hazelnut salad

Puddings

Rum babas circa 1970s

chocolate and chilli creme brulee - orange biscuits

I like the look so far and will start putting them on as specials over the next couple of weeks

would really like to put on Stornaway black pudding but cant find a supplier near me
