mozzarella stuffed chicken wrapped n pancetta

served with a sweetbite pepper sauce. Serves 4


4 chicken breasts

250g mozzeralla balls

6 sweetbite peppers (or your own preference)

200g pancetta


salt and pepper

200ml chicken stock


For the chicken

preheat oven to 200 degrees C

roast the peppers during pre heat and peel

finely chop the chives and mozzarella

season the chicken with oil, salt and pepper

make a pocket in the chicken and stuff with the mozzzarella and chive mix

wrap the chicken in the pancetta and cook in the oven for 25-35 minutes

for the sauce

add the peeled peppers to the stock and bring to the boil

place in a blender and blitz till smooth season to taste

serve with fresh market veg. ( i like creamy mash roasted carrots n parsnips :p)
