Michael Wignall is chef patron at Pennyhill Park. Michael Wignall at The Latymer is one of the country's best restaurants. Michael spoke to The Staff Canteen today as he is this month's featured chef.

        Michael Wignall could have been a professional BMX rider but instead opted for the adrenalin rush of professional kitchens. His career has taken him to L’Ortalan, The Clivedon, Michael’s Nook and The Devonshire Arms Hotel in North Yorkshire where he held a Michelin star and four AA rosettes. In November 2007 Michael moved to The Latymer at Pennyhill Park Hotel. In 2012 Michael Wignall at The Latymer became one of only eight restaurants in the UK to be awarded five AA rosettes. This was followed in 2013 by the restaurant’s second Michelin star. Michael describes his cooking style as “complex, carefully crafted and very technical but not intimidating.”
