Possibly try citric acid?
The only other Avo ice cream recipe I have is this one:
Avocado ice cream (John Campbell)
100g Caster sugar 75ml Water
85ml White wine 60g Liquid glucose
2 Hass Avocados 1 Lemon, juice
Dissolve the sugar in the water, white wine & liquid glucose over a low heat. Cool, then process to a smooth purée with the flesh of Avocados and the lemon juice. Churn 2 hours prior to needed.
but uses normal ice cream machine
