hi guys its me again

so come on fess up whats the biggest cowboy trick you have ever seen

helpfull hints
1, dont say you done it, blame someone else (we will all belive you)
2,say "someone told me a story about a chef that" ...............................
3,allways blame youre younger years when you were naieve and didnt know better



so ...... my turn

on my 2nd day as a chef (young and naieve) my sous chef got me to clean the fryer out first thing so we could "get ahead" for the upcomming wedding in 3 days time ,so i done as instructed and cleaned the fryer,to which the sous chef took the sirloin of beef and dropped it in the fryer assuring me that it was the best way to do it to "seel in the juices due to the extreme heat"

A couple of weeks later i was on breakfast shift and there was yet another wedding coming up so ME being young and naieve (honist gov i WAS only 15)and veerry keen to help, grabbed the three striploins from the fridge :exclaim: unforunetly they were to long to fit in the fryer so i dropped one half turned it around and then dropped in the other half(i know i should have jut halved it then i could have gotten a more allround even colour)

then the head chef walked in, i was as proud as punch, head held high, cause i was using my Initiative for the upcoming event.unfortunetly chef did not see it his way and i got the biggest arse kicking ever, and for the next year and a half it was my job to break down all the striploins that came in and seal them properly day off or not i would have to come in.


P.S we used it anyway of course :sick: and the fryer oil was minging when i done it but you could hardly tell honest :exclaim: :exclaim:

I tell you the things you see whilst doing agency you need blinkers on.
1st Hospital food,
Vienna steaks aka burgers with gravy.
Cheese souffle aka scrambled eggs with cheese mixed through.
Veg strog aka veg in a bechamel sauce :sick: :sick: :sick:
Now for the people that should know better Chefs on my travels with agency work
Lamb rump in the microwave (raw)
Mayonaise and turmeric aka hollandaise
Corn feed chicken aka chicken marinated in turmeric etc
Flatcap Mushrooms steamed (by a head chef)
Pork chop steamed (by his sous)
Pre cooking mange tout then labelling it peas (same head chef as above)
Pre cooking green beans for a function (nice one pedo boy)
Soup made with just broc and water :sick: :sick:

one or two..........

Know somebody who once deep fried a fillet steak to get it from MR to MW, customer loved it - apparently

Seen a pastry chef use a pacojet to whip cream, cos it said so in the instructions

One sous chef I know of, use to use the microwave so much the staff named it after him (3 rosette in the cotswolds)

When I was a commis, my CDP use to cook the carrots whole so it would be easier to baton them for functions.

Cauliflower cooked in the deep fat fryer for Cauliflower Cheese, wont name the chef in this well done London Hotel, Execpt to say his line was "out of Cauliflower Cheese I get you out of the Sh1T cocker"

had three boxes of plum tomatoes to peel once and a chef de partie said don t worry i will do them for ya and proceeded by blanching them in the fryer have to say i was not impressed, and the fryer oil is f**ked after!

another thing i have seen a few times is ghefs not picking the salad but chopping up the salad leaves rather than spending the time to pick it :twisted: there must be some more things that i have seen but can t really think of any at the moment

there is an attachment to whip cream in the paco and it comes out perfect. great for eton mess, chantilly etc. perfect consistency .
