Telling some utter div that just started/sacked, to chop flour.

hope you made him use the method where you sprinkle the flour through a knife waving from side to side.

or did you use the traditional board method and go up to check him half way through and say "NO THATS NOT HOW I SHOWED YOU" and promptly scrape it in the bin and make him do it again!

I chose the ol board method, sadly chef caught me and gave me a bollocking for it! The guy really went for it as well, asking if he was doing it right poor guy :(

Next trick, new commis to put milk in chefs stock.

get him to freeze it first and put it in just before going home, but let your chef in on it first though.

otherwise get him to pop to a local butchers and demand a kilo of chicken lips

Took a really nice photo of my commis chef's pride and joy, his car, sent it off to AutoTrader and Exchange and Mart. At the bargin knock down price of £400 because he was 'emigrating'!! with his mobile number and wait for the phone calls to roll in!

had something similar with my old exec chef and one of the sous.

the exec had ordered a porsche and had a few issues with delivery times etc and was getting a bit cheesed off as he was spending quite a large sum of money.

one of the sous wrote a letter on porsche headed paper stating that due to an incident at the factory where the car had been crushed, he woud have to go to the back of the waiting list, very well written and totally convincing, this was sent 2 days before the supposed delivery date of the car. when the chef got it, he went bananas, totally flipped and lost the plot, he spent most of the morning calling porsche and swearing down the phone at any poor sod who happened to pick up.

the sous eventually 'fessed up, and you would have thought he might have calmed down, but didn't see the funny side for some time and tore strips off the sous for the remainder of the day.

didnt the sous also give the exec a small replica of the car along with the letter as well?

got his bloody comeuppance when he left though, never seen a kitchen go to town as much as happened to him.
