Damien Grey is chef owner at the one Michelin starred, Heron & Grey in Dublin.

Damien Grey was born in Australia where he trained under Stravous Stravous a Greek chef in a restaurant called BJ’s for four years. The restaurant where he trained served traditional Greek food.

Opening hours: Dinner Thursday - Saturday. Half our guests are invited to join us at 7:30pm, while the remaining half to join us at 8:30pm.

Damien originally wanted to study architecture at university but didn’t have the money to fund the course. Although he didn’t set out to be a chef he has been involved in the food industry since he was ten years old where he cleaned and made sausages and steakettes on Saturdays and Wednesdays.

When he was fourteen he worked in a fruit and veg shop later becoming a kitchen hand for a catering company. Whilst working as a kitchen hand he became in awe of the chefs who came from all over Europe.

Heron & Grey

Damien and Andrew who co-own Heron & Grey met through a friend when Andrew was working in Front of house and Damien was working in Back of house. With little cash behind them they would meet up on the days they had off work and plan and discuss what they wanted their future guests to experience when eating at their restaurant.

It wasn’t long until the market canteen became available to buy so both Damien and Andrew put what money they had together in order to purchase the small restaurant.

After being open for a month they then closed to renovate the property reopening Heron & Grey on the 21st of January 2016. They received a Michelin Star in October 2016, blown away by how popular it had gotten in only the first 10 months of opening. With plans to expand once the time is right they are both enjoying learning how to restaurateurs keeping their heads down and pushing the business as hard as they can.

Heron & Grey is a small restaurant located in Ireland that seats just 66 people over the space of a week. By having a smaller number of people through the doors each week it means they can concentrate on the experience of each customer. Having both had previous experience in restaurants Damien and Andrew wanted to make sure they still had time to enjoy their lives outside of the business, so restricted to only serving dinner Thursdays, Fridays and Saturdays.
