James Wilkins is chef patron of the one Michelin starred Wilks restaurant in Bristol.

Wilks is owned by James Wilkins, along with his partner Christine Vayssade. It is one of only three Bristol restaurants to hold a coveted star in the Michelin Guide UK, along with Casamia and Paco Tapas.

Biography

James Wilkins was born in Dorchester, Dorset but was brought up in Cambridge. He worked as a kitchen porter at the Michelin starred Midsummer House when he was just 15 years of age. Head chef Hans Schweitzer gave James the chance to work in the kitchen and trained him for three years.

In 1995, James moved to London, working in several Michelin starred restaurants including Aubergine with Gordon Ramsay, The Halkin with Stefano Cavallini and The Greenhouse with Jeff Galvin. When he was 23, he moved to Cannes where he started working for Richard Neat, who at the time was the only English man in France to hold a Michelin star. Over the next few years, he travelled between France and England working in some of the best restaurants under the industry’s top chefs.

In 2006, Michel Bras asked James if he would move to Japan to work as head chef and director at his restaurant inside The Windsor Hotel, which he accepted.

With over 20 years in the industry and having worked in some of the most prestigious kitchens around the world, James and his partner Christine, settled back down in the UK to open their very own restaurant. The Michelin star was first awarded to Wilks in 2012 and it has retained this accolade for the past five years.

Wilks is a modern and vibrant restaurant based in Bristol. The neighborhood restaurant offers creative and accomplished cooking in a relaxed atmosphere, with service from knowledgeable and friendly staff. Ingredients are sourced from local farmers, growers and suppliers. Local artists also help with the restaurant’s décor.

Popular dishes include lobster salad, tail & claw ~ yuzu, fresh English wasabi, organic lettuce & little gem, lobster vinaigrette, lemon marigold; wild turbot fillet ~ pancetta "finocchiatta" Jersey Royals & Scottish girolles, turbot jus and black currant leaf panna cotta ~ apricot & vanilla compote, logan berry sorbet . Their five-course menu gourmand (seven courses on Friday and Saturday evenings) is available from £58 per person.
