Rob Palmer is head chef at the one Michelin starred, Peel's at Hampton Manor Hotel in Solihull.

Rob Palmer claims quality baking time with his Nan when he was younger, was what had inspired him into cooking as he realised he enjoys being in the kitchen. He attended college in Birmingham as well as juggling an apprenticeship at the Hilton Birmingham Metropole at the same time.

Biography

Rob has grown up on the door step of Hampton Manor and never imagined he would land his dream head chef job so close to home. He honed his craft as sous chef to award winning, Martyn Pearn who held a Michelin star for over 12 years.

Rob has found inspiration with placements in some of the country’s finest kitchens including Andrew Fairlie, Nathan Outlaw and the 2015 Good Food Guide, Chef to Watch – Gareth Ward.

Peel's at Hampton Manor

Rob took on the role at Peel’s at the age of 27 and within 3 months led the restaurant to its third AA rosette in January 2015 as well as scoring 10/10 in the Sunday Telegraph where travel critic Fiona Duncan hailed the restaurant as “sensational”. 

In October 2016 Rob picked up a Michelin Star for Peel’s. This accolade was the icing on the cake in a year in which Peel’s was named Best Fine Dining Restaurant in Birmingham at the Birmingham Food, Drink and Hospitality awards, was awarded its fourth AA Rosette, and won the Michelin Welcome and Service Award. He is rigorous in his approach to flavour and committed to the main ingredient on the plate.

The 4 AA Rosettes also make this one of just 50 UK restaurants to hold the accolade.

Hampton Manor

Hampton Manor is family-run with just 15 individually designed bedrooms and suites. The establishment is home to a team whose innovative approach to hospitality, cooking and design has elevated this Neo-Tudor Gothic mansion into the 21st Century. Derrick and Janet Hill invested in the property and supported the entire refurbishment in 2008.

Husband and wife team, James and Fjona Hill who run the hotel, have drawn on their surroundings to create a unique environment. The property, built in 1855, had fallen into decline when Fjona and James embarked on an extensive 18 month restoration project. Hampton Manor is ideal for beautiful walks across its 45 acres of gardens.

The food at Peel's

The food is inspired by the Victorian walled garden. The relationships they build allow them to gather the best produce from the UK’s farms and shores. The cellars showcase handcrafted organic and natural wines, and champion emerging British winemakers.
