Shay Cooper began his career in 1997 at Paul Heathcote’s School of Excellence, Manchester. But even before that worked as a commis chef while he was still at school. 

He has worked at Putney Bridge in London; Juniper in Altrincham, Cheshire; and the Vineyard at Stockcross, under executive chef John Campbell.

Shay then became head chef at the Hotel Endsleigh in Devon, owned by Olga Polizzi, where the restaurant was awarded three AA Rosettes.  

He then joined The Bingham, gaining three AA Rosettes and his first Michelin star. He also worked at the Goring Hotel in London, earning it a Michelin star in the 2017 guide along with The Bingham. 

He joined Julie’s in Holland Park in 2019, when the restaurant relaunched following a four year closure. He was named executive chef at The Lanesborough in July 2021, replacing Steeven Gilles.

He has earned praise for his light touch, allowing his ingredients themselves to do the heavy lifting. Shay creates simple dishes with subtly sophisticated flavours and textures. 



Eric Frechon opened Céleste in July 2015, replacing Apsley’s at the Lanesborough, London. French designer Alberto Pinto designed the beautiful French interior.

Through his food, he hoped to touch an emotional cord, and create a memorable dining experience. This includes beautifully decorated dishes to emphasise the ingredients used and create a lasting impression - something that the current executive chef is continuing.

The European-inspired dishes use only the very best produce and let the natural flavours of the ingredients shine through. Highlights include the scallop with celeriac and truffle,  along with the Wagu Sirlion.

Another stand out menu item is the 'chocolate opulence' dessert, which is a chocolate brownie, smoked cremeux and buckwheat combination.

The wine list is rooted in the classic regions and features many top producers and a large number of mature wines.

The Lanesborough is owned by the Abu Dhabi Investment Authority and since its relaunch in 2015 has been managed by the German-based Oetker Collection.
