Biography and accolades

Steve Smith ranks among some of the world’s top chefs. He has held a Michelin star from the age of just 24 and currently holds five AA rosettes. Smith is well travelled and has received plaudits wherever he has been. Steve was head chef at Hobeck Ghyll in Cumbria, Seaham Hall in Durham and more recently, The Devonshire Arms in Skipton.

While working in Melbourne, Smith held the highly prestigious American Express Australian Restaurant of the Year title and won the 2 ‘Hats’ award (the Australian equivalent of the Michelin star). Steve has certainly made his mark with food critics.

The London Metro said: “I dreamed about the food when I went to bed. It was a fairy-tale dinner, and Steve Smith is a magician.” Renowned food critic Andy Hayler also gave the chef a score of 16 out of 20, even beating the likes of two Michelin starred chefs Joel Robuchon and Michael Wignall. On reviewing the restaurant Andy said: “This was an excellent meal.”

Jersey and food style

In Steve’s latest adventure, he has taken over from Shaun Rankin at the Bohemia in Jersey. For a chef who prides himself on the use of fresh local produce, he could not dream of a more perfect setting than Jersey. The island is blessed with an abundance of fine produce such as Jersey Royal potatoes and Jersey cows, a dream for any chef wanting to express themselves. Steve has created a menu that is produce led, using modern technique and equipment to get the best out of his humble ingredients.

Speaking to The Staff Canteen while working at the Devonshire Arms, Steve said: “It is driven by the seasons and also driven by what we can get consistently and in good supply. Recently, we had a great week for getting hold of John Dory and halibut, so those items were on the menu, we will work around what we can get in good supply.” It is not surprising to see that Smith has found his calling in Jersey.


Bohemia opened in Jersey's capital St Helier in 1993. The owners also owned the hotel next door to the restaurant, which they decided to invest more money in to and it became The Club Hotel and Spa.

Head chef Shaun Rankin ran the kitchen from 2003, and Bohemia was awarded its first Michelin star a year later. It has retained this accolade ever since, including in 2013, just seven months after Steve Smith became head chef. Bohemia is the only restaurant in Jersey to have the coveted five AA Rosettes.
