Aceto Balsamico Tradizionale Di Modena P.D.O. roasted onion tart with thyme cream - serves 4

Ingredients

  • For the onions:
  • 4 sweet white onions cut into eight wedges
  • 40ml olive oil
  • 20g unsalted butter
  • Sea salt and freshly ground black pepper
  • 6 sprigs of thyme
  • 10ml 12 year old Aceto Balsamico Tradizionale di Modena P.D.O.
  • For the thyme cream:
  • 100ml fresh vegetable stock
  • 4 sprigs of thyme
  • 100ml double cream
  • Sea salt and freshly ground black pepper
  • For the tarts:
  • 4 puff pastry discs, 15cm diameter and 4mm thick, docked and frozen
  • 40g mascarpone, seasoned.
  • To serve:
  • 20g wild rocket
  • 10ml vinaigrette
  • 10ml 12 year old Aceto Balsamico Tradizionale di Modena P.D.O.

Method

For the onions, heat the oil in a roasting tin and add the onions. Turn the onions through the oil and then add the butter. Season well and scatter the thyme over the onions. Roast at 170℃ for approximately one hour, turning every 10 minutes. If the onions are catching, add a little water to the tin. You are looking for the onions to be well caramelised. Once cooked, remove from the oven and drain any excess oil. Drizzle with the Aceto Balsamico Tradizionale di Modena P.D.O.
and adjust the seasoning.
To make the thyme cream, reduce the vegetable stock with the thyme in a small pan to a syrup. Add the cream and reduce by a third. Season and pass.
To serve, divide the onions between the puff pastry discs, leaving a 1cm border around the edge. Dot with the mascarpone and bake at 180℃ for 15-18 minutes.
Place the tarts in the centre of the plates and spoon the thyme cream around the tart. Dress the rocket with the vinaigrette and place a small pile in the centre of each tart. Drip the Aceto Balsamico Tradizionale di Modena P.D.O. through the thyme cream.
