Cherry Rice Pudding

Ingredients

  • Rice Pudding Ingredients -
  • - 250g Kerrymaid Double
  • - 105g Caster sugar
  • - 500g Kerrymaid Single
  • - 125g Pudding rice
  • - 40g Cherry fresh
  • - 2 Vanilla pods
  • Hot Cherry Sauce Ingredients -
  • - 80g Cherry puree
  • - 25g Icing sugar
  • - 30g Water

Method

1. Soak the pudding rice for 20 minutes in cool water

2. Pour the Kerrymaid Double and Kerrymaid Single into a pan and reduce by half

3. Add the sugar and the rice to the remaining Kerrymaid Single and Kerrymaid Double mixture once reduced and cook out till the rice is cooked, al dente.

4. Just before you remove from the heat, add half the cherries and fold in.

5. For the sauce - bring the water and cherry puree to 85°c add the icing sugar and reduce by 1/3 pass through a sieve and serve at 35°c
