Michel Roux Jr's Prawn Toast with Walnut and Coriander Pesto

Using Bridor's Cereal loaf created by Frederic Lalos, Michel Roux Jr makes a prawn toast with a walnut and coriander pesto. This can be served as a snack or starter.

Ingredients

  • Ingredients (4 pers)
  • • 8 slices of Bridor Rustic multigrain loaf
  • • 300g peeled raw prawns
  • • 2 white of egg
  • • 2 tbsps.roasted hazelnut oil
  • • Salt, pepper, nutmeg
  • • vegetable oil for frying
  • • 60g walnuts
  • • 1 big bunch coriander
  • • 1 clove garlic
  • • 1 tbsp. parmesan
  • • 1 green chili
  • • olive oil, salt
  • • Red chicory

Method

Blitz the prawns in a food processor with the oil, seasoning and egg whites until smooth.

Spread this evenly on the sliced Bridor Rustic multigrain loaf then shallow fry until golden on both sides.

Drain on a paper towel, trim and cut into bite size, serve warm with the pesto.

Pesto

Put all the ingredients into a blender and blitz adding enough oil until smooth.
