His current restaurant takes these local, seasonal ingredients to fashion a bi-monthly changing tasting menu that showcases them in dishes of precision and elegance, that are as much a treat for the eyes as the belly. his excitement and enthusiasm for the dishes is evident when he delivers them himself to the table to eulogise about the products hes using.
