Simon Rogan built his reputation on an idea that's since become an industry standard: cook from your own farm. Since opening L'Enclume in the Cumbrian village of Cartmel in 2002 with partner Penny Tapsell, he's taken the restaurant from its first Michelin star in 2005 all the way to three stars in 2022, sourcing up to 90 percent of the menu from Our Farm nearby. Along the way he's built a wider restaurant group, launched the Simon Rogan Academy to train the next generation of chefs, and helped make Cumbria one of the most decorated dining destinations outside London.
