Here at The Staff Canteen, we feature a different member every month who we think deserves to be celebrated - this month’s winner is Phillip Bishop.

1. Current place of work, position  

 I work at The Greyhound on the Test - Stockbridge - Hampshire, as the head chef.

2. What is your cooking style and what should people expect from the food on your menu?

Modern British, serving dishes using local and fresh produce. Creating original plates of food as well as recreating classics with my own twists. Served in a casual environment for a relaxed dining experience. 

 

3. What is your favourite dish to cook and why?

Has to be a Bouillabaisse, a classic french fish soup. This was one of the first dishes I was taught as a young chef and I loved it! Different variations have been on my menus time and again. 

4. Name a food item/dish/ingredient that isn’t considered “cheffy” but that you love to eat.

I love to eat apples, simple I know but I like the fresh, sweet flavour and crisp crunch an apple gives. I use them quite frequently in my dishes as well as the juice to sweeten sauces and purées.

 

5. What do you like about The Staff Canteen app and website?

You’ve created a platform for chefs to share what we do, our recipes, pictures and videos. It’s great! You can go on there and read news, blogs and articles that relate to everyone of us.

6. What are your plans for the future?

Eventually I would love to have my own successful restaurant, focused on showcasing whats great about food and drink from Hampshire and the south coast. That’s my goal! And maybe a little in house bakery, suppling the bread and pastries to restaurant and the locals. I love to bake!

 

7) Lastly, how do you feel about the future of the industry coming out of the pandemic? Are you optimistic?

What I love about our industry is that we work hard, day in day out doing what we love and that will never change. We will just learn and adapt to make it work however we can. Everyone is now a loyal customer and we will do all it takes to make them feel safe while having a great experience with us. Our industry will get through these tough times!
