Here at The Staff Canteen, we feature a different member every month we think deserves to be celebrated - this month’s winner is Joe McCarthy

1.Current place of work, position

Head Chef, The Wychwood Inn

2) What is your cooking style and what should people expect from your food?

My cooking style uses local and seasonal produce and incorporating them into classic dishes with a twist. 

Mushroom parfait • shallot jam • truffle 

3) What is your favourite dish to cook and why?

Currently my favourite dish is the blackberry & ginger parfait (above). Reason being is the classic pairing of seasonal flavours and complexity of the dish. 

4) Name a food item/dish/ingredient that isn't considered "cheffy" but that you love to eat

My favourite foods are awesome burgers, and spicy pizza. Nothing fancy but you can’t beat if done well

5) What do you like about The Staff Canteen app and website?

I love the community on The Staff Canteen app and website, alongside the connection to other chefs.

6) What are your plans for the future?

My plans for the future currently revolves around my wife and two young girls, they are my first priorities.

7) How does it feel to be the final nominee in TSC's member of the year awards, and what would it mean to you if you won?

It's an honour to be to be the final nominee of TSC member of year! Would be a great addition to my many staff canteen cups if I won. If I won I would feel extremely humble to be valued so highly.
