With professional chefs working in high capacity kitchens often challenged to meet the increasing global demand for reliability and productivity, Electrolux Professional’s innovative thermaline range of modular cooking solutions has been designed to raise the bar in kitchen performance. Simon Lilley, Hot Products Category Manager at Electrolux explains how:

“The unique selling point of thermaline is that it combines a range of made to measure (M2M) solutions that can form an island unit in a kitchen, or as a unit against a wall, with a set of boiling and braising pans. Developed in Switzerland, our equipment has been specifically designed for high productivity kitchens such as fine dining restaurants and top hotels.

“We recognise that for chefs, being able to custom build a kitchen to their precise needs carries genuine appeal. With the thermaline’s M2M solutions, a chef can have a kitchen that is completely tailored to their menu, staff and level of output, which is a design principle now backed by the internationally-renowned Red Dot: Best of the Best award.

“The thermaline M2M range has been ergonomically designed and includes our patented flush-mounted triple ring highly efficient flower flame burners that are unique to the market and can be twinned with our Eco Flame pan detection device. Other innovations include an aquacooker for multipurpose cooking (sous-vide, bain marie or pasta), a high power Charbroiler with a patented efficient gas heating system and a host of other innovations including induction tops and pass through convection ovens.

ProThermetic: a new kitchen experience, all in one

“Within our thermaline offering, the ProThermetic range of braising pans offers chefs the choice of tilting or stationary braising pans, pressure pans and boiling pans, and a user friendly high definition touch screen control panel. The beauty of the control panel is that chefs can create up to 1,000 recipes using the programmable features on the range.

“ProThermetic offers the right answer to any chef’s needs. Chefs can choose from a wide range of product typologies (tilting or stationary braising pans, pressure braising pans and boiling pans), sizes, features, installations and configurations. The ProThermetic Pressure Braising Pan is the ideal ‘multipurpose system’ to boil, braise, griddle, steam or pressure cook, all in the same appliance.

Unrivalled simplicity

“We recognise the need for chefs to enjoy themselves in the kitchen, which is only possible when kitchen equipment offers simple and intuitive operations. The new user friendly, easy to clean, high definition Touch Screen control panel enables chefs to effortlessly create up to 1,000 personalized cooking programs, each of which can contain up to 15 phases.

“A multi-phase cooking program provides the benefit of choosing the various parameters for achieving desired results (times, temperatures, functions). Crucially for organisations boasting multiple kitchens, the recipes can be saved onto a USB key, and transferred to other appliances, to be used in any ProThermetic-equipped kitchen, ensuring cooking uniformity as well as the same quality and taste throughout different locations. As Hazard Analysis and Critical Control Point (HACCP) continues to grow in importance, data can be also downloaded and uploaded to a PC via USB key without the need for a specific software.

Perfect hygiene

“Proper practices for hygiene can drastically reduce the risk of contamination and are key factors to improving the levels of food safety within a professional kitchen. ProThermetic guarantees the highest water protection rating (IPX6), up to 8 times higher than previous IPX5 models, against strong jets of water on electric, gas and steam heated appliances. This new protection system, combined with the location of the electrical components separated from the water connection, ensures fast and effective cleaning operations. The special design of the new control panel, located on the right column (not on the working surface), is protected by the deep drawn inclined position, further simplifying the cleaning process.

Guaranteed efficiency

“The range of ProThermetic Pressure Braising Pans opens new possibilities for increasing energy savings, sustainability and business in the kitchen. Pressure cooking ensures an impactful reduction of up to 70% of the cooking time compared to a traditional braising pan; with better retention of vitamins, minerals and essential nutrients, therefore providing a higher quality of food. The decreased cooking time also allows the possibility to re-organize the workflow in the kitchen in a more efficient way, with clear economical advantages, and to reduce consumption of energy (up to 80% compared to a traditional braising pan), which is great for both the environment and energy bills.”
