Here at The Staff Canteen, we feature a different member every month we think deserves to be celebrated - this month’s winner is Mike Tudor.

As thanks for being a regular contributor to The Staff Canteen, Mike will receive an item of TSC merch of their choosing, a TSC mug and will be entered in our Member of the Year 2024 competition.

Current Place Of Work/Position?

Head Chef at Bromborough Golf Club

What is your cooking style and what should people expect from the food on your menu?

I like to cook with seasonal ingredients from classic dishes to fine dining always finding ways to push ourselves.     

                            

What is your favorite dish to cook and why?

I love making the trio of cheesecakes, made up of Bailey's, Oreo and raspberry.  The customers love it!

I also have to say our roast beef is really popular with the club members.

Name a food item/dish/ingredient that isn’t considered “cheffy” but that you love to eat

Mama Tom Yum noodles are my comfort food - they are my late night snack washed down with a beer. 

What do you like about The Staff Canteen app and website?

I love seeing what other chefs are creating. Seeing chefs from all over the world interacting with each other is cool and fun. It's really helped me move on to the next level.

What are your plans for the future?

I have just dipped my feet into the private house dining market doing my first one a couple of weeks ago. It was a blast and the guests loved it. This is what I really want to do in the long term, as I will be able to get more family time. I would love to open my own restaurant in the near future!

What is the most important lesson you’ve learnt as a chef?

Treat people with respect, as it costs nothing. It works both ways the response we get from our guests says it all for me - they are always positive and they keep coming back!
