Adam Nevin to lead new chapter at Michelin-starred Glovers Alley

Adam Nevin has been appointed executive chef at Michelin-starred Glovers Alley in Dublin.

The move marks a major new chapter for the restaurant at five-star The Fitzwilliam, following the recent departure of long-standing chef Andy McFadden.

Glovers Alley will reopen as Glovers Alley 2.0 on Wednesday, September 2, with Adam leading the kitchen and developing new menus for the restaurant.

The appointment brings Adam back into a Michelin-starred Dublin dining room after his recent success at The Morrison Room at Carton House, where the restaurant won its first Michelin star under his leadership in February 2025.

Fergal O’Connell, chief executive of The Fitzwilliam Hospitality Group, said: “Adam is one of the best-regarded chefs on the island. His cooking, his ethos and leadership style are exactly right for our reimagined Glovers Alley 2.0. We look forward to showcasing the new look restaurant, and Adam’s exciting new menus, at the end of the summer.”

Adam Nevin joins Glovers Alley

Originally from Maynooth, Adam began working in hospitality from a young age, starting as a kitchen porter at 15.

After time at Ballymaloe Cookery School and The Shelbourne, Adam moved to the UK in 2017, working under Alyn Williams at The Westbury in London before joining Tom Kerridge’s team at the two-Michelin-starred Hand and Flowers.

He joined The Grill at The Dorchester in 2019 and was promoted to head chef in November 2022.

Adam returned to Maynooth in 2023 to become head chef at The Morrison Room at Carton House, where he quickly established himself as one of Ireland’s most closely watched chefs.

When The Morrison Room was awarded its first Michelin star, the Michelin Guide Great Britain & Ireland described Adam’s food as rooted in “strong classical technique”, while noting that “some wildcard flavour combinations work wonders thanks to their fine judgement.”

A new era after Andy McFadden

Adam’s appointment follows Andy’s recent departure from Glovers Alley.

Andy opened Glovers Alley after returning to Ireland following his time in London, where he had held a Michelin star as head chef at Pied à Terre.

Under Andy, Glovers Alley became one of Dublin’s key Michelin-starred restaurants, known for precise modern cooking and a highly polished dining room experience.

Adam’s arrival now signals a fresh direction for the restaurant, with The Fitzwilliam positioning the relaunch as a full reimagining of the Glovers Alley offer.

Speaking about the move, Adam said: “I’m incredibly excited about this opportunity, about making something very special here, and working with Fergal and the team at Glovers Alley.

“For the next few weeks I’ll be travelling for research, and I’ll have the head down, focusing on developing the menu and building my team ahead of our opening in September.

"The potential of the restaurant is huge, and our setting in the city is just fantastic. I can’t wait to get started, to bring fresh energy, welcome our first guests, and to cook in the heart of Dublin.”

Glovers Alley will open on Wednesday, September 2.
