Adam Stokes will open a second restaurant in Birmingham next year

Michelin-starred chef Adam Stokes, has announced he will open a second restaurant in Birmingham early next year called The Oyster Club.

The fish and seafood restaurant will be located 'just around the corner' from his Michelin-starred restaurant, Adam's, and will feature small plates such as crab on toast, selections of oysters and larger plates like fish and chips using prime fish such as brill and turbot.

The Oyster Club 

Adam told The Staff Canteen: "I've always wanted to have a fish restaurant, I'd like a fish and chip restaurant as well but that's another goal. Since I first started cooking at Hambleton Hall I wanted a little 20 cover fish restaurant by the sea. Then I grew up and realised that would make no financial sense what so ever!"

He added: "The building The Oyster Club will be in, the style of it was just screaming out for a fabulous, good quality seafood restaurant. We want it to be very accessible and relaxed dining-wise.” 

On the location Adam said: "It's very exciting in Birmingham at the moment. This area is really the place to be - there is a great atmosphere and it's slightly busier than where Adam’s is, which is what this new restaurant needs.

"Hopefully it will be a seafood lovers heaven! It's very exciting to use my knowledge of sourcing fish and translate that into a restaurant in Birmingham, especially as it's as far away from the coast as you can get! It won't be a challenge as I’ve forged relationships with the best suppliers."

 Adam says he won't be heading up the new 30 cover restaurant, set to open in late February or early March 2019, and he will be bringing in a team to run it for him.

"I have Tom (Shepherd) in place as head chef at Adam's which is allowing me to look at The Oyster Club and get it up and running. All the dishes will be run past me but I'm not planning on cooking there!"
