Chef Alex Dilling plans residency at Michelin-starred Iniala Harbour House restaurant in Malta

Chef Alex Dilling is taking up residency for 100 days as of June 18th at One Michelin star restaurant ION - the harbour in Malta alongside his former chef de cuisine, Pierre Minotti.

The former executive chef at two Michelin-starred London restaurant The Greenhouse shared the news in an Instagram post, in which he said he and Pierre have spent the past months planning the project, "sourcing products, meeting artisans and fishermen to bring to life a menu of new creations based on local ingredients and those of the surrounding areas."

He expressed excitement at the move as the past year has been a tough one for the industry, especially so in London, where The Greenhouse was one of many casualties, including The Ledbury, Roux at Parliament Square, the Oklava bakery and Tom Cenci's joint venture with restaurateur Adam White, The Loyal Tavern.

The Mayfair restaurant was permanently closed down as a result of the pandemic after surviving the demise of The Square, its sister restaurant owned by the now-dissolved Marlon Abela Restaurant Corporation (MARC).

Pierre Minotti, who will be taking up residency at the Valetta restaurant with Alex, was the chef de cuisine at The Greenhouse for almost three years prior to the restaurant's closure, before which he worked at Hélène Darroze at The Connaught and Alain Ducasse at the Dorchester.

Located on the rooftop of luxury hotel Iniala Harbour House in Valletta, ION - Harbour House offers classical fine dining dishes, many of which put local seafood centre stage. The restaurant received a Michelin star last month within six months of opening.
