Bocuse d’Or announce vegetal theme for the 2017 finals

Bocuse d’Or have announced a vegetal theme for the 2017 finals. This marks the first time in the competition's 30 year history that it will focus purely on fruit and vegetables.

For the dish on a plate the twenty four participants in the 2017 grand finale will be required to produce fourteen identical dishes which are 100% vegetal, using a list of products available from the Metro Market, and a choice of two products from their country of origin.

The theme specifies no meat instead focusing on vegetables, fruits, cereals and seeds. It is a reflection of contemporary culinary trends, and also recognises the boom in the popularity of vegetarianism and plant-based foods.

The Bocuse d'Or will be held at Sirha - the world leading hospitality and trade show, which opens in Lyon, France, in 2017. More than 189,000 visitors from around the globe, including the UK, are expected to attend the showcase food service event from January 21 to 25.
