Dan Ashmore steps down from his role at Gleneagles, sets his sights on Edinburgh
Dan Ashmore is stepping down from his role as head chef of The Strathearn at Gleneagles and has his sights set on Edinburgh.
The chef joined Gleneagles last year after The Pompadour at Waldorf Astoria closed after 95 years. The Caledonian has since been taken over by MasterChef: The Professionals finalist Dean Banks, who sought a new a site after the lease on his flagship, Haar, fell through.
Dan announced the news that he would be leaving Gleneagles on social media, where he said he had "an absolute blast working with this team of young and up-and-coming chefs," despite opening and closing twice due to successive lockdowns.
The chef thanked the kitchen team, with whom he said he worked through "some of the busiest record-breaking months in the hotel's history."
Prior to joining Gleneagles, Dan was the head chef at The Pompadour for three years, first under the Galvin brothers' tenure, staying on when their agreement with the hotel ended.
Dan's previous roles saw him work at Fishchers at Baslow Hall, now-defunct The Square Mayfair, La Trompette and Number One at The Balmoral.
