Jason Atherton set to leave his role at Café Biltmore and The Tea Lounge in the Biltmore Mayfair after a three-year partnership

Jason Atherton, who has been with the hotel since its opening in 2019, is stepping away from the partnership, with executive chef Paul Walsh set to take the helm in September. 

The chef originally helped with the opening of The Biltmore Mayfair and brought his classic training along with an innovative use of modern British ingredients. 

During his time at the Biltmore, he created an offering of dishes inspired by his travels around the world but using local and sustainable produce. Along with that he also ran operations at Café Biltmore, The Terrace, The Tea Lounge, and The Pine Bar.

According to Code, Jason is parting ways with the Biltmore 'to focus on his own restaurant group'.

He told CODE: "I was brought in to oversee the food and I think we did a great job. But now’s the time to move on and focus on The Social Company. We have new openings to work on.

"It’s been amicable [with the hotel]. We’re on good terms. I just want to concentrate on other things now. I wish The Biltmore all the best and every success in the future."

Jason didn't confirm what his upcoming restaurant plans were, but said they ‘are well underway’ and to look out for future announcements. 

Paul has worked under Jason for over a decade as well as in restaurants including Restaurant Gordon Ramsay and launching fine wine establishments, the 28-50 brand. Paul also launched and led Jason Atherton’s City Social for five years and achieved the restaurant’s Michelin-starred status within seven months of its opening.

Regarding taking over and the new direction, Paul said: “I’m excited to be taking over from Jason fully  at one of Mayfair’s prime hotels working with the team at The Biltmore and hope to carry on delivering signature dishes for both our international and London guests to enjoy as well as developing new menus to put my stamp on this new chapter.”
