Manchester’s Palace Hotel appoints new chef line up

The Palace Hotel in Manchester has announced a new chef team who between them have trained with the likes of Ferran Adria, Raymond Blanc, René Redzepi, Massimo Bottura and Marco Pierre White. The news comes as the 271 bedroom hotel enters the final stages of a multi-million pound investment which is due to open in September. 

Michael Purtill, General Manager at The Palace Hotel, said: “These are exciting times for The Palace and exciting times for Manchester.  There’s an incredible energy and creativity in the city right now, which is reflected in the world-class restaurant and bar scene that Manchester has to offer.  We are thrilled and honoured in equal measure to be partnering with MFDF, and look forward to participating in the Festival, with events in The Refuge and as hosts of the Gala dinner.”

Steven Wilson will be the new executive chef brining his experience from working with Ferran Adria, Raymond Blanc, René Redzepi, Massimo Bottura, Pierre Gangaire and Paco Torreblanca.

Paul Speakman will become the new banqueting head chef who has learned from the likes of Sunday Brunch’s Simon Rimmer and from his time working at The Lowry Hotel’s River Restaurant under Eyke Zimmer. 

Heading up the Refuge restaurant will be Alex Worrall who brings experience from working with Tetsuya Wakuda in Sydney and Marco Pierre White at The Oak Room.

The Refuge will also be run by DJs turned restaurateurs, Luke Cowdrey and Justin Crawford who will work with the new chefs to create an exceptional dining experience for guests and visitors.

The Palace Hotel will also partner with one of the city’s most popular events, the Manchester Food and Drink Festival which takes place from 29 September to 10 October 2016.
