 Here at The Staff Canteen, we feature a different member every month who we think deserves to be celebrated - this month’s winner is Marcin Ksiazka.

1. Current place of work, position  

I currently work as a Head Chef in healthy restaurant I Love Juice in Warsaw, Poland.

2. What is your cooking style and what should people expect from the food on your menu?

In my cooking, I place great emphasis on combining natural, nutritious ingredients and extraordinary flavours. I uniquely transform fresh products, adding creativity and techniques I’ve learnt working in top London’s restaurants, into healthy fine dining cuisine. I get inspired by seasonal ingredients found on local farmers’ markets.

 

3. What is your favourite dish to cook and why?

Risotto - simple and versatile, it can be transformed into a sophisticated dish e.g. by adding some truffles or black ink and scallops, which reminds me of a holiday by the sea. 

4. Name a food item/dish/ingredient that isn’t considered “cheffy” but that you love to eat?

My weekend cheats are four cheese pizza and Belgian waffles.

5. What do you like about The Staff Canteen app and website?

The staff canteen app is the chef’s community platform where I can follow cooking trends and watch rising talents in hospitality. I like the idea of chefs’ posting the photos of their masterpiece food.

 

6. What are your plans for the future?

I like diversity, apart from running day to day kitchen operations, I collaborate with dining platforms. I cook at private events and retreats abroad. Travels inspire me to rediscover and play with ingredients.

7. Finally, the Coronavirus has had an immense impact on the industry. How have you managed to keep a level head and how would you recommend others stay positive in this difficult time?

The time of the pandemic forced many restaurants to close their doors. It was crucial for me to act fast and adapt to the new reality. I managed to redesign my menu to offer takeaway and delivery services. This kept us going and people can enjoy our food in the comfort of their own home. Staying positive helps to figure the way out.
