Here at The Staff Canteen we felt it would be a great idea to show our appreciation to our loyal users, so to honour this we will be featuring a different member every month who we think deserves to be celebrated. This month’s winner is Tim Kewley, a member who regularly contributes to our site via the app Chef+. Current place of work, position and a brief overview of where you have worked before.

I am head chef at the George and Dragon in Clifton, Cumbria. I've previously worked in a lot of high end pubs in the North West including The Eagle & Child, Bispham Green and Nigel Haworth's Ribble Valley Inns. 

What is your cooking style and what can people expect from the food on your menu?

I'd probably describe my cooking style as modern British, with some European influences from having lived and worked abroad. People can expect to eat dishes with some seriously low food miles at the George and Dragon. We (that's the Royal 'we'...) rear all our own meat (shorthorn cattle, saddleback pigs, even goats) and our vegetables and fruit come from the gardens of our sister establishment Askham Hall. Something we're very proud of.

What do you like about the Staff Canteen app and website?

It's a great place to be inspired, with lots of great chefs to follow (shoutout to my #tweezercrew and fellow The Staff Canteen members Josh Donachie, Kareem Roberts and Louis Robinson!) and of course to share your own work.

What is your favourite dish to cook?

Off the current menu, it would be our Saddleback pork dish that comes with loads of piggy bits including a cheek doughnut! At home its scrambled eggs. I am the king of scrambled eggs.

Guilty pleasure: food item / dish / ingredient that aren't considered "cheffy" but you love to eat?

Crabsticks haha!

What are your plans for the future?

We just won the Good Pub Guide "Cumbria Dining Pub of the year", very proud of that but some more awards to frame would be nice!
