Robert Hunter is the new head chef of The Gun, Docklands

Robert Hunter, former junior sous chef at The Royal Automobile Club, Pall Mall, has been appointed as the new head chef of The Gun, Docklands.

Robert’s new role will see him head all kitchen operations, supplier relations and the running of the food service from lunch through to dinner. Outside of service, menu planning and development will also be vital aspects of Robert’s role.

The Gun is owned by the renowned EMT Group, which prides itself on its high quality ingredients, and Robert will be responsible for the daily sourcing of the best local and seasonal British ingredients from specially selected UK farms and suppliers.

Robert comments: “I’ve always been a big fan of ETM as owners of some of my favourite London gastropubs and restaurants, admiring them especially for their commitment to sourcing the very best British ingredients. It’s great to now be working with the group and I’m really excited about what’s in store!”

Robert’s role will act as a natural progression from his previous experience in the culinary world. As well as a successful eight-year position as demi chef and dhef de partie at The Goring, Belgravia, Robert has honed his skills at well-established hotels and restaurants across the world, including tours of duty at two-star Michelin restaurant, Eleven Madison Park in New York and Tangalooma Wild Dolphin Resort in Brisbane, Australia.

His most previous role saw him working in the Great Gallery Kitchen of The Royal Automobile Club, a London private members’ club. Here he was able to work on a vast repertoire of new and exciting dishes whilst sharpening his fine-dining skills and attention to detail, making him well equipped for his new role at The Gun.

He brings with him a huge amount of industry expertise and experience to help us take the food at The Gun to new and exciting heights.”The Gun is a grade II listed early 19th century building overlooking the London Docklands. Steeped in history, its name is taken from the cannon that was fired to celebrate the opening of West India Import Docks in 1802.
