The Michelin Guide published its 2020 list for the city of Shanghai's restaurants yesterday.

The continued success of Paul Pairet's 'culinary experience' - seating ten people daily for a 22-course tasting menu - meant that Ultraviolet maintained its three stars for the third year.  An additional two restaurants made it to the two star ranking, and nine received a single star - bringing the city's total number of Michelin-starred restaurants to 40.

Ji Pin Court and Taian Table were granted two Michelin stars in this year's guide, meaning the total number of two star restaurants in the city is now eight.

Internationalism was the word of the day among the nine new one stars, with Sichuanese restaurant Yu Zhi Lan, Cantonese restaurants Ming Court and Jin Xuan, Shanghai specialist restaurant Chen Long Hang, Italian Da Vittorio and French restaurant Maison Lameloise.

Other one star recipients were Bao Li Xuan, Moose and Xin Rong Ji.

All in all, the Shanghai Guide counts 40 starred restaurants. Another 24 have been deemed worthy of a Bib Gourmand, and 66 of a "Plate" recognition.

"With a record number of 40 starred restaurants, representing 30% of the 2020 selection, Shanghai is confirming the development and upscaling of its gastronomic scene along the Bund, in Pudong and elsewhere in the city”, said Gwendal Poullennec, the Guide's international director.

“With 31 types of cuisine rewarded in the pages of the Michelin Guide Shanghai 2020, this selection also highlights the great diversity offered to gourmets, with tables that perfectly represent local cuisine and others that offer flavors from around the world."
