Andoni Luis Aduriz, chef patron of Mugaritz in Spain is The Staff Canteen's featured chef this month.

He is one of the world's leading chefs so it is a real privilege for us to speak with him. Located in the small town of Errenteria in the Basque region of northern Spain, Mugaritz is the brainchild of chef-patron Andoni Luis Aduriz.

Aduriz worked for some of the greatest Spanish chefs including Juan Mari Arzak and Ferran Adriá at the legendary El Bulli before going on to open Mugaritz in 1998. Mugaritz gained its second Michelin star in 2005 and has featured continuously in Restaurant Magazine's World's 50 Best Restaurants list for the last eight years, holding the current position of 4th best restaurant in the world. At Mugaritz Andoni Luis Arduriz seeks to create an experience above and beyond just eating but a kind of synthesis between food, sensations, experiences, memories and emotions which he terms techno-emotional Spanish and which gives guests an all-round experience like no other.
