Hello all,

Wild Mushrooms

I’ve been listening to the strained voices of the world’s wild mushroom suppliers all week.

Only a politician would say it’s easy right now.

Morels-21kg scraped together through agents for Monday, and 60kg directly from Turkey for Wednesday. Prices are rising.

My slightly doom-laden supplier is saying lack of rain may bring about an imminent end to the season. I think not, as other areas of the world should kick in.

Girolles - Surprisingly nice from Portugal. Prices are high as the season is closing.

Pied de Mouton - Also from the US.

Yellow Legged Chanterelle - Small quantities from the US. You are better off using frozen chanterelles unless quality improves.

St George & Mousseron- I predict an early start this year and I’m pushing Bulgaria. I have been offered St Georges twice this week at silly money, two weeks earlier than normal.

Truffles

I’m waiting 1 more week before buying summer truffles when I expect the nose and marbling to be at entry level.

Until then we have tinned slices.

And a really rather large walk in fridge’s contents more.

Game

I’m committed to supplying wild boar & venison until the end of the month, when we will switch our focus to other sources of protein.

Ambient Corner

Our duck eggs are the perfect rich foil for asparagus and many other scrumptious plate partners.

Farmed in Norfolk by Watercress Lane ours are date stamped for peace of mind. Something the law doesn’t demand.
