Adam Simmonds named executive head chef at Capital Hotel London

Adam Simmonds has been named the executive head chef at London's Capital Hotel. 

A spokesperson for The Capital Hotel confirmed the news to The Staff Canteen that the chef will be taking over the position after Nathan Outlaw left earlier this year to focus on his restaurants in Cornwall and his new project at The Goring Hotel. 

Adam Simmonds, whose rise to fame after obtaining Michelin stars at both Ynyshir Hall and Danesfield House was precipitated by his twelve-month long pop-up restaurant in Soho, The Test Kitchen, was recently named head chef at Adam Handling's Chelsea restaurant, but parted ways with the chef a week after the launch, offering no explanation to the press.

This time, the chef said he wants to commit to the position and continue the hotel's food legacy, introducing a new menu reflecting his style of cooking honed at Danesfield House in Marlow. 

Adam's career as a chef began at the Globe Inn in Leighton Buzzard when he was just sixteen years old. Since then, his successes have come one after another: he worked at Le Gavroche, The Ritz, and finally worked his way up to a chef de partie position at Stefano Cavallini's the Halkin. 

He then worked for Gary Jones and Raymond Blanc at Le Manoir for three years, and after obtaining three AA Rosettes for his work at The Greenway, earned his first Michelin star at Ynyshir Hall in 2006. 

Between 2010 and 2014, he ran the kitchen at Danesfield House, where he earned another Michelin star and four-AA Rosettes. 

The hope when he came to London was to eventually own his own restaurant, hence the twelve-month pop-up, intended to define his concept and earn enough money to launch a venue of his own. 

His appointment at The Capital Hotel appears to be a side step from his original plan. The Staff Canteen reached out for comment  from the chef and will update this story as it develops.
