Originally from Normandy, Marion Lancial is head chef at Le Cheval Noir, the modern French bistro at The Dark Horse in Belfast’s Cathedral Quarter. Her cooking is shaped by classical French training, family influence and a growing connection to Northern Irish produce.

Early career and cooking background

Marion’s culinary journey began in her grandmother’s restaurant, an early influence that helped shape what has become a 20-year career in food. She first trained as a pastry chef in France, building strong technical foundations before continuing her career abroad.

She later moved to Washington DC, where she graduated from the Escoffier School of Culinary Arts and worked as a private chef for diplomats and embassies. Due to TV scheduling changes, Great British Menu this week airs on Wednesday (6.30pm), Thursday and Friday (both 7pm).
