Martyn Nail to oversee The Grill at The Dorchester after Tom Booton exit

Martyn Nail has been confirmed as the new culinary director at The Grill at The Dorchester, following the departure of Tom Booton.

After six years with the iconic London hotel, Tom made the decision to leave earlier this year.

In his place comes former Claridge’s chef Martyn, taking on the role of culinary director.

Operating as head chef will be Jacob Keen-Downs.

Martyn Nail’s era at The Grill at The Dorchester is set to begin officially from September 15.

The menu will feature shared small plates, twists on classic dishes and a commitment to British produce.

Signatures include tuna tartare, The Grill seafood platter and a beef Wellington, while breakfast features Portland crab benedict and other reinvented classics.

Sundays feature a traditional roast, and dessert favourites such as banana split and baked Alaska.

“This dining room has been making history for 95 years,” said Martyn.

“Our aim is to celebrate the best of the grill tradition with exceptional cooking and a great environment.

“Whether our diners choose to snack at the counter, graze with friends, or enjoy the full experience alone, we want the room to feel vibrant, relaxed, and warm — the place to go, and the place to return to.”

Martyn spent over three decades at Claridge’s, joining the hotel in the 1980s and rising through the ranks, becoming executive chef in 2004.

He worked closely with celebrated chefs including Gordon Ramsay, Daniel Humm, and Simon Rogan during their restaurant residencies at Claridge’s.

Jacob arrives following a spell as head chef at Italian restaurant Gold in Notting Hill, having previously worked at Sam’s Waterside, Le Caprice and Rick Stein.

After leaving Claridge’s in 2021, he transitioned into consultancy and culinary advisory roles, lending his expertise to hospitality projects and mentoring the next generation of chefs.

Autumn jazz collaboration

This autumn will also see The Grill collaborate with Ronnie Scott’s Jazz Club for a supper club series.

The line-up features Natalie Duncan, Natalie Williams, Jo Harrop and Georgia Cecile.

Tickets will be priced at £145 per person.
