Michelin-starred restaurant reopens in Surrey

The Tudor Pass has opened a bold new chapter in its story - and it’s one that’s set to capture the attention of food lovers beyond Surrey.

The Michelin-starred restaurant at Great Fosters in Surrey on July 16, under the direction of Chef Stefano Di Giosia, ushering in a distinctive new era for this celebrated dining destination.

Stefano is widely regarded as one of the UK’s most promising culinary talents. His career includes formative years at Heston Blumenthal’s The Fat Duck, where he contributed to the development kitchen renowned for creating some of the most innovative dishes in modern gastronomy.

Most recently, he was part of the acclaimed team at KOL in Marylebone, one of only two British restaurants recognised on the prestigious World’s 50 Best Restaurants list.

Joining Stefano in leading the kitchen is sous chef Luca Delfini, whose professional background includes notable establishments such as Luca, Fallow, The Fat Duck and the three Michelin-star Villa Crespi in northern Italy. 

The Tudor Pass, which first earned its Michelin star in 2019 (originally as The Tudor Room) and retained the accolade in 2025, is set within the Grade I listed Great Fosters estate. The five-star country house hotel is distinguished by its Tudor architecture, expansive formal gardens and rich heritage, providing an exceptional backdrop for fine dining.

The menu philosophy will combine technical precision with a narrative approach to dining, offering guests an experience that is both refined and memorable.
