Paulo de Tarso has left Margot

Margot founder Paulo de Tarso has left the restaurant he launched four years ago.

The Brazilian-born maitre d', who is of Italian descent and moved to the US in his teens before hopping the pond to London, shared the news on social media, where he said

"After four successful and exciting years building Margot into one of London's highly regarded restaurants, I am moving on. I wish all the team at Margot well and look forward to telling you more about the next chapter in my story in this amazing industry soon."

Paulo met his business partner, Nicolas Jaouën, at Scott's in London's Mayfair, where he worked after The Wolsley, before leaving to help Daniel Boulud launch his eponymous bar at the Mandarin Oriental Hyde Park. 

His followers will be eager to hear what his next step given the success he enjoyed at Margot, launched in 2016.

In an interview with Jay Rayner this year, Paulo was asked to define good service, to which he replied: “It’s about being present, noticing what’s happening and anticipating what’s needed."

“You don’t know what’s going on with someone when they arrive. They might be happy or they might be rude in lots of different ways, because of something that’s happened to them that day.”

A good server's job, he added, is “taking away the stresses,” and while anyone can learn the skills of good service, one crucial component is that “you need to have empathy.”
