Stan Wroblicki appointed head chef at Bar Valette
This June, Stan Wróblicki will take on a new role as Head Chef at Bar Valette, the second restaurant from Chef Owner Isaac McHale.
Stan is currently sous chef at the two Michelin-starred restaurant The Clove Club.
ABOUT ISAAC
Isaac McHale was born in Orkney and grew up in Glasgow. His fascination for cooking stemmed from a young age; one of his earliest food memories was eating pakora at one of the many local Indian restaurants when he was seven years old.
He worked in restaurant kitchens across Glasgow from a young age but eventually decided to go travelling to gain experience in restaurants around the globe.
During his travels, Isaac spent time at Marque in Sydney, completed a stage at René Redzepi's Noma and worked under Tom Aikens at Michelin-starred Elystan Street, before joining Brett Graham's opening team at The Ledbury.
Stan's promotion
Located around the corner on Kingsland Road, Bar Valette will mark the next step in Stan's career as he brings his technical skill, love of seasonal ingredients, and thoughtful approach to the kitchen.
Fresh from a research trip in the Basque region, he plans to focus on simplicity, flavour, and precision, creating delicious dishes using top-quality produce, while evolving the menu with a clear sense of purpose.
Originally from Warsaw, Stan moved to the UK more than a decade ago to work in top kitchens. His career began in 2014 with roles at Pollen Street Social, Dabbous, and Pure C in the Netherlands.
He joined The Clove Club in 2017, working his way up to sous chef. In 2021, he completed a six-week stage at Noma in Copenhagen, deepening his commitment to clean, seasonal cooking.
He steps into the role following Erin Jackson Yates, a Roux Scholarship finalist and nominee on the National Restaurant Awards' ‘Chef to Watch’ list. This will be his first head chef position, and he’s looking forward to shaping Bar Valette’s future under Isaac's guidance.
