The Lanesborough hotel is to due to open the lanesbourough grill as a replacement for its former Michelin-starred restaurant, Céleste, on 25th april

Céleste, the 3 AA-star restaurant which lost its Michelin Star in the the Michelin Guide 2022, is to be reinitiated as the Lanesborough Grill, with chef Shay Cooper, who was appointed as the hotel's executive chef in 2021, at the helm.

Shay has worked in some of the country's most famous kitchens including Juniper, The Vineyard, the Endsleigh Hotel, which achieved 3 AA-Rosettes when he was working there, The Bingham and The Goring, where he and his team earned a Michelin star.

Guests at The Grill's opulent dining room will be given the choice between an à la carte and a set menu showcasing the best of seasonal British cuisine, with dishes such as Yorkshire rhubarb trifle with Earl Grey custard and millionaire shortbread; Coronation crab salad with curry leaf sabayon; Jerusalem artichoke Hereford beef tartare with potato crisps, cured egg yolk, truffle, and sherry dressing - with some served table side from gueridon trolleys.

The restaraunt will offer an extensive wine list, as well as the opportunity for guests to enjoy pre and post-dinner cocktails in the Withdrawing Room and Library Bar.

Commenting on the revamp, Shay said: "Our vision is to take the combination of tradition and innovation to create a compelling contemporary offering, using the very best of British produce to deliver unforgettable dining experiences in one of London's most beautiful and atmospheric Regency dining rooms."

"It’s important that our guests enjoy more than just great food and drink – we want to infuse fun and creative elements and, of course, a sense of high glamour.”

“London is one of the world’s most established and diverse restaurant markets and it is a very exciting time to be launching a new restaurant concept.”
