The Selby brothers detail plans for upcoming takeover of Evelyn's Table

When the restaurant industry is finally allowed to resume operations, the Selby brothers will set forth on their next adventure, taking over Evelyn's Table in Soho. 

The three chefs, Luke, Nathaniel and Theo Selby told Restaurant magazine that their plans to start cooking at the Chinatown restaurant, set below the Blue Posts pub, have been delayed due to the Coronavirus outbreak, but that they are now hoping to launch in late summer. 

The Selbys previously held the reigns in the upper level Ollie Dabbous' Green Park restaurant, Hide Above, with Gold Scholar 2017 and National Chef of the Year 2018, Luke, at the helm. 

The chef said he was offered "huge salaries" to work at hotels where they would have been responsible for breakfast, lunch, afternoon tea and dinner, but that this was not was he sought from his next position. 

"For me it was always about quality. I knew I would not be happy in a huge restaurant, even if I was getting paid lots of money." 

As for the food, which will be priced at just £55 for a tasting menu, the chef said: "It will be my style, which has been influenced by the places at which I have worked." 

"I want to give value on the plate and I don't want to charge a huge amount of money on opening. I feel like we have to prove ourselves. We're paring it back and focusing on getting it right while also being accessible. We don't want to go in all guns blazing."
