Tony Parkin restaurant among 12 new Michelin Guide additions

Daise by Tony Parkin is among 12 new restaurants added to The Michelin Guide Great Britain and Ireland.

The Wirral restaurant, opened by Tony Parkin in partnership with his wife Laura and chef Andrew Sheridan, has joined the Guide’s online selection as part of Michelin’s latest monthly update.

The additions do not mean the restaurants have been awarded Michelin stars. Stars, Bib Gourmands and other special awards are only announced at the annual Michelin Guide ceremony, with the next full Guide set to be revealed in 2027.

But inclusion in the Michelin Guide remains a significant recognition for restaurants, placing them on the radar of inspectors and diners following the development of the UK and Ireland’s most ambitious kitchens.

Daise by Tony Parkin recognised by Michelin

Daise by Tony Parkin opened in Oxton in February, marking a new chapter for Tony after a career that has already included Michelin recognition.

Tony previously held a Michelin star at The Tudor Room at Great Fosters, where he built a reputation for detailed, technically precise cooking.

At Daise, the focus is on a tasting menu shaped by modern technique, strong produce and Asian-influenced flavours.

Michelin described the restaurant’s cooking as “shot through with well-judged Asian flavours”.

The new listing also adds further momentum to the north west’s fine dining scene, with the Wirral increasingly part of a wider regional conversation that includes Liverpool, Manchester, Lancashire and Cheshire.

Conor Gadd’s Burro also added

Another high-profile addition is Burro in Covent Garden, the first solo restaurant from Conor Gadd (pictured at top), chef co-owner of Trullo in Islington.

Burro opened in March and brings Conor’s produce-led Italian cooking into central London, with a menu built around pasta, grilled dishes and a classical Italian structure.

Michelin said the restaurant brought “classical, unfussy Italian goodness to the city centre”.

The June list also reflects Michelin’s continued interest in restaurants expanding from established teams and operators, with a number of chefs and restaurateurs using new projects to explore a different style from the businesses that first made their name.

What Michelin Guide additions mean

Michelin updates its restaurant selection throughout the year, with new additions highlighted online and through its app.

The monthly updates allow inspectors to recognise restaurants as they emerge, rather than waiting for the annual ceremony.

For chefs, operators and restaurant teams, a Guide listing can be an important step in building national visibility, especially ahead of the next full Michelin announcement.
