Tony Parkin to open DAISE in 2026

Chef Tony Parkin has announced plans to open a new restaurant, DAISE by Tony Parkin, in early 2026, marking a return to a small, hands-on style of cooking following what he described as a 'rollercoaster' year.

About Tony

Tony did an apprenticeship under John Campbell at The Vineyard at Stockcross which led him to go to Copenhagen to work at Kommendaten, then at Noma.

On returning to the UK, Tony worked at NorthcoteRestaurant Gordon Ramsay and Restaurant Adam Simmonds at Danesfield House, as well in the private sector for Lord and Lady Bamford at Daylesford.

In 2019, Tony took the head chef position at The Tudor Pass in Great Fosters before the restaurant was rebranded Tony Parkin at The Tudor Room. In 2021, Tony released a cookbook, named after the restaurant before announcing his departure in 2022.

Tony then joined Cliff House  in September, 2022.

He also featured in Apple TVs Knife Edge earlier this year.

The announcement

The post was shared via social media, where Tony confirmed that he and his wife, Laura, will open the restaurant together, with Tony cooking in the kitchen and Laura overseeing the front of house and wider operation.

Describing the concept, Tony said the restaurant will be a small intimate space', emphasising a personal, owner-operated approach.

He wrote: “After what I can only describe as quite the rollercoaster of a year I’m pleased to announce that early next year myself and my wife Laura Parkin will be opening restaurant DAISE by Tony Parkin.

"A small intimate space where we I will be manning the stoves and Laura taking care of the more important stuff.

"More details will be released after the Xmas madness however I would just like to take this opportunity to all my close friends that have been there for me this year I look forward to thanking you with dinner in the new year! You know who you are!"

Further details about the restaurant, including its location and opening date, are expected to be shared after the Christmas period.

Tony added that the opening represents an opportunity to thank those who have supported him over the past year, saying he looks forward to welcoming close friends for dinner once the restaurant opens in the new year.

A chef-led, hands-on return

While limited details have been confirmed, the format described suggests a deliberately scaled-back operation, with both owners directly involved in day-to-day service.

The announcement aligns with a wider trend across the sector, as experienced chefs opt for smaller, more controlled restaurants in response to ongoing operational and financial pressures within hospitality.

Tony has previously spoken to The Staff Canteen about the importance of clarity of vision, consistency, and creating environments where both food and teams can thrive.

DAISE appears set to reflect those principles, with a focus on direct involvement rather than expansion.

Background

Tony is known for his career at the highest level of fine dining, having held Michelin stars during his time leading kitchens in both the UK and Ireland. His work has been defined by precise cooking, classical foundations, and a strong emphasis on discipline and standards.

DAISE by Tony Parkin will mark his next chapter as an independent operator, working closely alongside Laura in a partnership that places equal importance on kitchen and front-of-house leadership.

No opening date has yet been confirmed, and The Staff Canteen understands that further announcements will follow in the new year.
