We feature some of the best chef’s in the world on The Staff Canteen but where would they be without their kitchen porter?

We thought it was time to celebrate the unsung heroes of the kitchen in a new monthly feature, KP of the Month, and this month it is Honza Mahr who currently works at The Torridon Hotel which has 3 Rosettes from the AA Restaurant Guide.

Honza was nominated by head chef David Barnett who said: "I have nominated Honza because he is a rock in my kitchens, no job is too big and he always has a smile on his face regardless of the job in hand. Absolute legend!"

How long have you worked at The Torridon Hotel for?

I have been working at The Torridon for over a year, my partner Eva also works at the hotel in housekeeping.

Why did you want to be a KP?

I enjoy manual labour and enjoy working in the kitchen environment. I have a keen interest in food which lets me learn at the same time.

Are you interested in cooking or happy to stay as a KP?

I personally like the blend of doing both, some food prep and cleaning keeps me happy!

What is it like to work at The Torridon, and what is chef David like as a boss?

I really enjoy working at The Torridon, it is a beautiful place to work, David is a good boss and I am always happy when he comments on how good my work is.

As a KP, what’s the most annoying thing chefs do in the kitchen?

I wish chefs could be more organised with their day!

Is there anything chefs could do to make your life easier?

Be more organised! One thing that does annoy me is that the chefs never put things back in the right place.

And do you get to try the food? That must be a perk!

Yes we always get to try things which I really enjoy, especially if I have helped make it.

Do you have a favourite dish you have tried at the restaurant?

We have our own farm at The Torridon so my favourite dish is from our Tamworth Pigs. Homegrown Tamworth pork, red cabbage, celeriac and marjoram.

Would you encourage other chefs to nominate and celebrate their KPs?

Yes, it is always good for people to be recognised for the hard work they do and receive praise.
