Chefs Tristin Farmer, Kirk Westaway and Andrew Walsh celebrated in Singapore's Michelin Guide 2021

One new three star, one new two star and and twelve one star awards were added to Singapore's Michelin Guide as it celebrated its fifth year of publication yesterday.

Among them, modern European restaurant Zén headed by British chef Tristin Farmer was promoted to three Michelin star status, joining French restaurants Les Amis and Odette; a pleasant surprise as the sister restaurant to three Michelin-starred Frantzén in Stockholm only entered the guide with two stars in 2019.

Jaan by Kirk Westaway was awarded a second star, making it the fifth restaurant on the country's two-star list, alongside Saint Pierre, Shisen Hanten, Shoukouwa, and Wake Ghin.

Twelve restaurants were awarded a star, including Cure by Irish chef Andrew Walsh (who formerly worked at Jason Atherton's Singapore tapas outlet, Esquina); Sommer, led by 27 year-old chef Lewis Barker; Esora, Shang Palace; Thevar;  28 Wilkie and Cloudstreet, whose chef Mark Tai also won the guide's inaugural Michelin Guide 2021 Young Chef Award, introduced with the aim of celebrating rising talents in the industry. 

Gwendal Poullennec, the guide's international director said: “Despite the challenges posed by 2020, it has been impressive to observe how the chefs and their teams were able to reinvent and adapt to the unfolding situation.

"On top of managing their restaurants, they also came together in looking out for those who were in need in their communities; from feeding migrant workers and frontline workers, to setting up welfare funds for displaced F&B staff. In this 2021 edition, we pay tribute to the perseverance and dedication of these professionals, who continue to bring us together over the finest gastronomy and experiences.

"I believe the readers of the Michelin Guide and all food lovers are excited to continue discovering Singapore’s colourful and resilient dining scene, as well as the reinventions that have taken place over the last year and those to come.”
