Ivan Tisdall-Downes to open new Hackney restaurant this October
London-born chef Ivan Tisdall-Downes is set to open his new restaurant and wine bar, Field Notes, in London Fields this October.
The venue will launch at Studio 3 Monohaus, 143 Mare Street, Hackney.
This news comes months after Ivan announced the closure of his former Green star restaurant, Native (now reopened as Sow).

A journey into food and sustainability
Field Notes represents the culmination of Ivan’s 15-year journey exploring global food cultures and sustainable practices. His career has taken him from the fields of Devon and kitchens in New York, to regenerative farms across Europe and city growers in London. These experiences now come together in a style of cooking that is rooted in British produce but enriched with international influence.
The menu will be concise and constantly evolving, bringing together nostalgic flavours from Ivan’s upbringing with techniques and ideas drawn from his travels. Dishes will include morel har gow, brown crab tikka masala, and pickled cockle flatbreads. Guests will also see reimagined versions of some of his much-loved past creations, such as the fermented potato waffle and the fish fillet.
Ivan said the aim is simple: to create food that is “bold, accessible, and above all, flavourful.”
The drinks programme
Alongside the food, Field Notes will introduce a “Living Drinks Program” - a cocktail and wine bar guided by the same sustainable ethos. Diners can expect wild sodas, botanical cocktails, and a curated list of natural, low-intervention wines sourced from vineyards around the world.
Ivan said: “Field Notes is about exploring sustainability as a global conversation. But at its heart, it’s about serving food that people want to eat - flavourful, surprising, and welcoming to everyone.”
