Michelin-starred Tomos Parry to take London restaurants to Wales
Welsh Michelin-starred chef Tomos Parry will relocate his three London restaurants to the west Wales coast for an exclusive weekend with fforest, in Cardigan.
From September 19-22, Tomos and more than 30 members of his team will craft a series of menus inspired by the land’s unique character, incorporating local produce to create one-off dishes that reflect the essence of the Welsh landscape.
Brat and Mountain both hold Michelin stars in the English capital, while Brat x Climpson’s Arch focuses around wood-fired cooking, with Tomos also well known for bringing Basque flavours to his restaurants.
At the event, the menu will celebrate the very best of the season, cooked following Tomos’ signature fire-led approach and shaped by local ingredients with dishes that include wild shellfish from Car Y Môr, heritage grains from Felin Ganol, vegetables from Awen Organics and cheeses from Caws Teifi.
Born in Anglesey, Tomos’ Welsh heritage shapes his approach to food, with each of his restaurants paying homage to the ingredients, traditions and landscape of Wales. Growing up, Tomos spent many of his formative years exploring the mountains of north Wales and working in seafood restaurants along the coast, creating a deep-rooted connection to the land and sea.
Through this collaboration, Tomos, his team and fforest will come together to explore the flora and fauna of west Wales in a celebration of place and plate.
Fforest, the rural retreat founded by husband-and-wife duo James Lynch and Sian Tucker is set within 500 acres of the Welsh countryside. Over the last 13 years, fforest has cultivated a community of friends and family, creating a space, which celebrates the great outdoors and where food, culture and nature flourish.
The weekend will be enhanced by the talents of an extraordinary group of artists, designers and makers, who will enrich the dining experience and curate a programme of unforgettable events and workshops. For one evening, Tomos will also be joined by a special guest chef, bringing their own perspective and creativity to the weekend’s culinary journey.

From an early age, Tomos spent weekends working in a local restaurant, before going on to study politics and history at University of Cardiff.
Tomos trained under the mentoring scheme of Grady Atkins at Le Gallois. He then moved to London, aged 25, beginning his professional chef career at The River Café. After a few years, he moved to Michelin-starred Kitchen Table in Fitzrovia, before progressing to head chef at Climpson’s Arch in Hackney.
From there, he went on to open Kitty Fisher’s in Mayfair, and was instrumental in its success.
In 2014, Tomos won Chef of the Year at the Young British Foodie Awards and Best Breakthrough Chef at the Food and Travel Awards in 2015. He was also included in The Evening Standard’s 2015 1,000 Most Influential Londoners and won Newcomer Chef of the Year at the 2015 London Restaurant Festival.
In March 2018, Tomos opened his first restaurant, Brat, on Redchurch Street in Shoreditch. Brat was awarded its first Michelin star in October 2018, just six months after opening and was named London’s best restaurant at the 2019 National Restaurant Awards and has featured in the top 10 ever since.
In 2020, Brat was also awarded Squaremeal’s London restaurant of the year.
In summer 2023, Tomos opened his third permanent London restaurant, Mountain, on Soho’s Beak Street awarded its first Michelin star in February 2024, seven months after opening.
In 2024, Mountain was awarded second place and the highest new opening at the National Restaurant Awards.
