25

Job role

Junior sous chef

Chef background

“I trained at Westminster Kingsway College, where I really found my feet in the kitchen. My first job was at Pétrus by Gordon Ramsay, which was a huge step into the industry and an incredible place to learn discipline, precision and consistency at a young age.

“One of the most memorable places I’ve worked since then is Trinity in Clapham, London — a kitchen that really pushed me creatively and technically. I’m now working at the Prince Arthur in Belgravia, a Basque-inspired pub where I’ve developed my cooking centred around fire to bring out the best flavours.”

Who and what inspired you to become a chef?

“My grandparents were my biggest inspiration. I spent loads of time cooking with them when I was younger, and those moments really stuck with me. They were the first people who showed me how fun cooking could be, and that joy is what made me want to take it further.”

How would you describe your style of cooking and any influences on it?

“My style is mainly classic European. I’m French-trained, but I love using Italian and Spanish ingredients — big flavours, good olive oil, great cheese, that sort of thing. I like food that’s simple but beautifully cared for.”

Three ingredients you can’t live without

“Butter, cheese and olive oil.”

What you eat when you get back from service

“A burger is my guilty treat after a long service.”

Why did you want to take part in MasterChef: The Professionals?

“I always told my nan and grandad that I’d do it for them one day. I wanted to keep my word and stepping into the MasterChef kitchen feels like they’re here with me.”

Outside of cooking what are your passions?

“Skiing in winter, golf in the summer, and Arsenal all year round. If I’m not in the kitchen, you’ll probably find me watching the match or planning the next trip.”
