Wilsons among restaurants featured in Apple TV+’s Knife Edge: Chasing Michelin Stars

Bristol’s award-winning farm-to-table restaurant Wilsons will be among a small number of international restaurants featured in Apple TV+’s new eight-part documentary series Knife Edge: Chasing Michelin Stars.

Produced by Studio Gordon Ramsay Global, the series is fronted by food expert Jesse Burgess, co-founder and presenter of TOPJAW.

The production offers exclusive access to the Michelin Guide throughout a year-long season, following chefs around the world as they face the pressures of gaining, maintaining or losing the industry’s most prestigious culinary award.

A year inside the Michelin season

The Michelin Star remains the highest accolade in fine dining, recognising the finest ingredients cooked to impeccable standards. Knife Edge: Chasing Michelin Stars documents the emotional and professional stakes of this pursuit, capturing chefs at pivotal moments in their careers.

Across eight episodes, the series visits restaurants in New York (Coqodaq, The Musket Room, Nōksu), Chicago (Cariño, Esmé, Feld), the Nordics (Aure, Jordnær, Knystaforsen), the U.K. (Emily Roux's CaractèreHouse, Wilsons), Mexico (Em, Máximo), Italy (Agriturismo Ferdy, Kresios) and California (Harbor House, Pasjoli, Pasta|Bar).

The series shows the secrecy of the Michelin Guide’s inspectors, who operate under false identities as they dine anonymously.

The outcome can bring elation or heartbreak, with reputations and livelihoods on the line.

Wilsons: Bristol’s neighbourhood pioneer

For the UK episodes, the focus turns to Wilsons, led by chef Jan Ostle and his partner Mary Wilson. The restaurant is recognised for its near self-sufficiency and forward-thinking approach to sustainability. Mary oversees Wilsons’ two-acre Market Garden, which provides the majority of the restaurant’s fruit, vegetables and herbs.
